Tasting Notes
This citrus-yellow wine has a refreshing fruity flavor of pear, pineapple, damascus and vanilla and intense aromas with good minerality. This white wine has good natural acidity and freshness. It is particularity complex and intense. Well balanced in the mouth. The aftertaste lingers with a smooth and persistent flavor.
Winemaking
After a selection and careful manual harvesting, the grapes are subjected to gently crushing and total destemming. It follows a period of 8 hours of maceration at 10 ° C to maximize the performance of the enzymes responsible for grape extract flavors. Cold settling at 7 ° C for 48 hours. Selected yeasts are used to induce fermentation elapsing between 12ºC and 15ºC for at least 30 days. Stage in barrels of 225 liters of French oak for 9 months.
