Tasting Notes
Deep ruby color with intense aroma to black fruits, wild blackberry and cassis. Notes of spice and vanilla. It shows an excellent structure, fine tannins and volume of mouth, dense, deep and persistent.
Winemaking
After the selection and manual harvesting, the grapes are subjected to crushing and full destemming. Follows a period of 24 hours pre-fermentation maceration at 30°C to maximize the performance of the grape enzymes responsible for the flavor extraction. Selected yeasts are used to induced the alcoholic fermentation taking place between 22ºC and 24ºC during a minimum of 10 days. Malolactic fermentation induced with temperature control.

Spicy Mediterranean food, cheeses and pasta, grilled red meat and game animals such as stewed boar.
