Tasting Notes
Intense ruby color. Deep aroma of ripe black fruits, spices, vanilla, plum where the French oak integrates in perfect harmony, giving balance, elegance and great complexity. Elegant in the mouth with very concentrated and structured end. Balanced by its final acidity, long with soft tannins.
Winemaking
Made from grapes from vines over 75 years of age. Total destemming, foot pressing on granite winches. Alcoholic fermentation in winches for 6 days, with continuous work and controlled temperature. Malolactic fermentation in stainless steel vats. Later stage of 14 months in new French oak barrels. Stage in bottle for 12 months before commercialization.
Food Paring
Roast and grilled red meats and lightly spicy meat dishes. All type of cheeses.
