Fragosa Reserva Red
Tasting Notes
Ruby red color with very complex aroma. Excellent evolution in the bottle, "bouquet" dominated by the elegant "cassis", spices, tobacco box and vanilla notes very well integrated. A lot of concentration and body, ripe tannins, excellent balance and a surprisingly long finish.
Winemaking
After the selection and careful manual harvesting, the grapes are subjected to crushing and full destemming. It follows a period of 24 hours pre-fermentation maceration at 30 °C to maximize the performance of the grape enzymes responsible for extracting color and aromas. Selected yeasts are used to induced the alcoholic fermentation taking place between 22ºC and 24ºC during a minimum of 10 days. Malolactic fermentation induced with temperature control with stage in french oak barrels during 6 to 12 months.

Spicy Mediterranean food, cheeses and pasta, grilled red meat and game animals such as stewed boar.
