Tasting Notes

Ruby red color, complex aroma, with several layers, highlighting ripe wild fruit, spicy notes from barrel aging and a balsamic component. Structured in the mouth, with integrated acidity and firm tannins. Ends long and gastronomic.

Winemaking

The grapes are harvested in 20 kg boxes and received at the winery. The manual sorting and stemming is followed by crushing in a granite mills with traditional treading, followed by maceration and alcoholic fermentation between the mills and the vats. After fermentation, maturation takes place over 16 months, in used French oak barrels.

Ideal to accompany roasted meat dishes, game, smoked meat, cod and cheeses.
